ListPlot3D

I was wondering if anyone could tell me if it is possible to put Greek
characters on the axes of graphs obtained using ListPlot3D and, if so,
how it is done.

Also, the standard Mathematica text book says that, if the ``Lighting->False''
option is used, the grey-level of the resulting surface will increase with
the z-value.  However, I have noticed that some parts of the surface have
higher grey values than other parts with higher z-values.  It would appear
that  the surface normal also affects the grey value (as one might expect
with a lighting model).  Does anyone have any ideas about this?
Also, is there a way to change the grey level gradient so that it is steeper
for higher z-value and lower for lower z-values?
