I'm considering purchasing a computer algebra system myself so I've asked
about this; the Windows Professional and Student versions are exactly the
same. The difference lies in the support (manuals, etc) you receive.
Here's the letter I received when I sent mail to Wolfram:

Paul, Thank you very much for your interest in Mathematica. Mathematica 3.0
for students will be $139.95 or if you purchase the current version now (SRP
$109) you can then upgrade to 3.0 for $25. This will be a fully functional
version that will utilize the math coprocessor. It will also be a 32 bit
version that is native to Win95 and Windows NT.
