I believe this depends on the platform.  In the Windows version, you go to 
the Style menu, select Edit Default Styles, choose each style you want to 
change (one at a time) and click Set Font.  I believe the approach is 
similar, if not identical, on a Mac.  If you don't have a notebook 
interface, it beats me.
