You will have to download the Mathematica fonts to your Postscript printer. Check out: http://www.wolfram.com/support/Systems/All/ManualFontDownload.html . This is automatically done in Version 3.0.1: http://www.wolfram.com/look/3.0.1/index.html . Also, if you are using Ghostscript to display MMA EPS files (perhaps to add preview images) then you'll have to make the MMA fonts known to ghostscript by editing your Fontmap file.
