Justin:
You can use the option AxesLabel.
For example

Plot[x,{x,0,3} , AxesLabel-> {"pressure","volume"}]

It works with other 2D graphics.

Similarly

Plot3D[x y,{x,0,3} ,{y,0,2}, AxesLabel-> {"pressure","volume",
"temperature"}]
