Try

BlackAndWhite[GrayLevel[gr_]]:=GrayLevel[0];
BlackAndWhite[RGBColor[r_,g_,b_]]:=GrayLevel[1];


and then use

ParametricPlot[..., ColorOutput->BlackAndWhite]

or

Plot3D[..., ColorOutput->BlackAndWhite]
