Steve,

Load the Standard Package (see Help Browser)

<< Graphics`ContourPlot3D`

Then

ContourPlot3D[x^2 + y^2 - z^2, {x, -2, 2}, {y, -2, 2}, {z, -2, 2}]

gives the surface.
