Johannes, Try the following pattern

x[_]b[_] + __ -> z

It seems to work on the expressions I tried:

g=Sin[x]^2/(b[1]*x[1] + b[2]*x[2] + b[3]*x[3] + b[4]*x[4] +
  b[5]*x[5] + b[6]*x[6])

g/.x[_]b[_] + __ -> z

Sin[x]^2/z
