Hello Frank,
The solution is using Evaluate.

In[1]:=
FuncList = {Exp[x], Sin[y], z^3};

In[2]:=
VarList = {x, y, z};

In[3]:=
Do[Plot[Evaluate[FuncList[[i]], {VarList[[i]], -5, 5}]], {i, 1,
Length[VarList]}]
