By specifying the value of p is greater than 1 not less than 1, i.e.,

In[3]:= FullSimplify[Abs[p - 1],  p > 1]
Out[3]= p - 1

Your code specifies 1/2 < p < 1 which ensures Sign[p-1]= -1.
