y1[x_]:=y1[x-2Sign[x]]/;Abs[x]>1;

Plot[y1[x],{x,-5,5}];

y2[x_]:=Piecewise[{{1-Abs[x], Abs[x]<=1}, 
        {y1[x-2Sign[x]], Abs[x]>1}}];

Plot[y2[x],{x,-5,5}];
