Here, it does return a number

In[30]:=
data = {7, 2, 3, 25, 1, 10}; 
f = InterpolatingPolynomial[data, x]; 
f /. x -> 5

Out[32]=
1

which tells me there is something else going on in your notebook. Try this in a fresh session. Do you still have a problem?
