If you set your default input and output format types suitably, you will see Mathematica replace the character sequence "->" to a single character with no need to use the esc key.

I believe you will find Mathematica does not use a special version of Courier New. Instead, Mathematica automatically substitutes characters from one of its unique fonts for certain characters rather than outputing everything in Courier New.

Word has this problem without any additional help from Mathematica. My solution is simply to avoid using Word altogether. Word simply is not well designed for writing technical papers with lots of equations. Note, I do not claim Word cannot be used for this purpose. Rather it is not an optimum choice.

My solution is to use LaTeX and convert the final output to PDF with the fonts embedded. LaTeX and TeX were designed specifically to be able to type set mathematics. So, the needed characters are found in a standard LaTeX installation.

That would eliminate some of the difficulties. But there will still remain the font issues Word creates independent of Mathematica.
