I'm not aware of any book, but IMTEK would be as good a place as any to
start.
Another place might be WRI's conferences. A few years ago, they had a talk
from a company that used Mathematica to set up FEM's. Sorry I can't be more
specific, but failing memory & several computer changes mean that my
recollection is not what it should be.

The book is actually included in the online documentation.
