You're not going blind: that command has indeed disappeared in the 6.0 
menu system.  So two workarounds:

(1) First select all cells (Ctrl-a in Windows, e.g.), then from the 
menu, Evaluation > Evaluate Cells.

(2) Make all the cells Initialization cells.  (Of course this takes as 
much work as (1), but if this is a notebook you use frequently, you'll 
only need to do it once.)  Then from menu Evaluation > Evaluate 
Initialization Cells.

I don't know the design considerations that led to removal of the old 
command.
