Taylor[n_]:=
    Normal[Series[ArcTan[x],{x,0,n}]];

F=ArcTan[x];

Use SetDelayed when defining Grafico

Grafico[n_]:=Plot[{F,Taylor[n]}//Evaluate,
      {x,-Pi,Pi},PlotStyle->{Blue,Red}];
