I think you mean

rgb = {{{1, 0, 1}, {2, 3, 2}, {4, 6, 4}, {3, 2, 1}},
    {{9, 1, 3}, {3, 2, 1}, {4, 3, 3}, {5, 3, 2}}};
Map[First, rgb, {2}]

{{1, 2, 4, 3}, {9, 3, 4, 5}}
