Actually nevermind my previous post. If one adds i (as I should have)
then Mathematica does not appear to have a problem. So
Simplify[Im[x], Assumptions -> (x - x\[Conjugate])/\[ImaginaryI] > 0]

returns Im[x] as it should. So in this case Mathematica recognises
that x-Conjugate[x] is real. So the problem only seems to appear when
expressions like x*Conjugate[x] are involved... Weird
