Take a look at the Manipulator help page in the Documentation Center.
In the section EXAMPLES->Options-> AppearanceElements are listed all those
accepted by Manipulator.

Hi,

Does anyone know how to specify which  button will be shown in the following
example?

Manipulator[0.5, Appearance->'"Open", AppearanceElement->{..?..}]

Ho do I refer to the individual buttons?
