I'm making EPS files from Mathematica. Everything looks good when Mathematica renders in the front end. However, when I use Display to create the EPS files, the fonts are not being created correctly. Instead of Times and italicized Times, the fonts are coming out as Courier. Special characters like the Greek letter zeta are not working either.

I tried changing the character encoding by setting $CharacterEncoding to things like ''AdobeStandard'' and ''Unicode'', but that didn't change the files at all.

I even created a GIF file using Display. The Greek symbol worked, but all other characters were in the Courier font.

How can I fix the font problem with the EPS files?
