I am new to Mathematica.

1) How do I plot the following data in 3D (large data, only a part of it is used here):

2) How do I use Manipulate to see how data evolves as time changes?

3) I want to calculate 2 period %-age changes in v1 & plot them with date on X-axis. I want to then make the Starting Date as a variable & see how the chart looks like when Starting Date is Manipulated.

4) Same for v2. How then to plot (3) above & (4) here on a single plot?
