I have not found a DateListPlot3D, but you can always search the help system and perhaps you will find something that I've missed.

The method I've used in the past when I wanted to do something like this is to convert the date using AbsoluteTime, do a 3D plot, and insert custom tick marks on the time axis if need be.

If you want to use this as an opportunity to learn about Mathematica then you might consider writing your own function that would do all that automatically.
