Since your subject question stated a preference for EPS graphics export, I will briefly explain how to do this. However, other formats are also available.
If you are using Mathematica 4, exporting graphics is easy. Select the cell of your desired graphic. Go to the Edit menu in the Front End, and choose Save Selection As... Pull down to EPS, and you'll get a dialog box prompting you for save information.

As for the TeX equations, you might try saving the entire notebook in TeX format. Look under the File menu for Save As Special... Choose TeX from the drop down menu, and you'll get another dialog box.
