Read chapter 5 "Regression with both x and y in error" pp. 129-171 in "Analysis of Straight Line Data" by Forman Acton, John Wiley 1959 or Dover 1966 or Google Book search can show you some pages of that, but you can buy old used copies cheap and I highly recommend buying and reading that several times. That is purely applied mathematics, but shows just how deep the pool is. You are asking to fit a curve, which is even deeper than asking to fit a straight line.
