You can use a ColorFunction as a fourth function in 
ParametricPlot3D. You can even make it a function of
the parameter if you wish. Here are a couple of

    ParametricPlot3D[ {Sin[t], Cos[t], t/3, RGBColor[1,0,0]},

    ParametricPlot3D[ {Sin[t], Cos[t], t/3, RGBColor[t/15,0,0]},
