I can't help you about your mac, but your X11 server needs the mathematica
fonts. There are two ways to accomplish this:

1) Install the mathematica fonts (to be found in the directory 
   mathematica/SystemFiles/Fonts/*) on your local X11 server.
2) Start an font server on the reomte host, which serves the
   matheatica fonts, and instruct your local X11 server to connect
   to this font server. Under Unix (Linux) the name of the font server
   is called "xfs", and the command to add the remote font server to
   your local search list for fonts is "xset".
