Hi Nick,
In[1]:=
p=1+x+x^2+x^3+x^4
Out[1]=
1 + x + x^2 + x^3 + x^4
In[2]:=
t=Table[p[[i]],{i,1,Length[p]}]
Out[2]=
{1, x, x^2, x^3, x^4}
You can use Reverse[] if you want the list in the opposite order.
