interpolation over irregular grid of points

I am trying to plot some contours using data for velocity fluctuations or kinetic energy I collected by velocity measurements in a complex geometry. The problems arising from that geometry are that I can't measure everywhere and as a result my data do not correspond to a regular grid of points. The Interpolation Function command doesn't work if an irregular grid of points is used. This is quite strange because other packages (e.g. UNIRAS) do not have that restriction. Mathematica technical support suggested that I should use triangulation algorithms. This seems rather complicated though. Has anyone faced that problem before? I would appreciated if anyone could provide me any information that might help to solve that serious restriction. Regards, Stavroula King's College London.
