I upgraded to the 3.0 professional version less than two monthes ago. I don't have your problem when using the keyboard, everything on the screen looks fine; but whenever I save it as EPS file, the printed output just shows the same problem as your's. Moreover, the auto-generation of EPS graphics file of the "Display" function does not work whenever there is a manupulation of font(s). I just checked Wolfram's web FAQ and download a small partial fix. But that wouldn't solve the problem in satisfactory way. My impression is that Wolfram still has not solved the problems and needs to do a lot in these regards, especially for the EPS compatiblity issues, as well as system stability.
