In:=
expr=Sin[x+y]+z/p-t;

whichVariables[expr]
Out=
{t,p,z,x,y}

In:=
expr = Sin[x + Exp[y]]/Sqrt[z^(1/3)] - Cos[Sin[Tan[p]]];
In:=
whichVariables[expr]
Out=
