Zak, Try regular expressions as for example:

str = "aiibbaecXXacarbiiicc"

StringCases[str, RegularExpression["a[^b]+b[^c]*c"], Overlaps -> All]

{aiibbaec, aecXXacarbiiic, acarbiiic, arbiiic}

StringCases[str,RegularExpression["a[^b]+b[^c]*c"]]

{aiibbaec,acarbiiic}
