You would have to import the geocoded ZIP code data from another GIS application. Hopefully, Wolfram Science will hear our cry and update the next version of Mathematica to incorporate geocoding functionality.  I  really don't see how any software can says it has a "GIS" if relies on import image data from other products that actually do have the geocoding functionality.

Has anyone used Mathematica to plot business data (in the form of different background shading) by zip code?

Don't see any zip code maps built into Mathematica.
