Joaquim,
you could try LaTeX psfrag-package. In Mathematica you label your axis eg
"xAxis", then export the graphic as an EPS-File.
In LaTeX then you can enter:

\psfrag{xAxis}{$\epsilon$(GPa)} -- there are some positioning parameters too
\includegraphics{your-eps-file}
