It's a well-known feature of Mathematica, as a search through the list's
archives will reveal ....
Your EPS export is correct. It's just a question of font mapping.
What you have to do is tell your EPS interpreter which font to get the
characters "(" and "(" and from what I can tell, most other mathematical
symbols including things like "-". These characters live in the Math??.*
fonts.
The easiest way to do this is to run the EPS file through the program
embedmmafont (thanks to PJ Hinton for this) which is available from
MathSource. Resulting files are larger than the original EPS files because
they contain the fonts with the missing characters but their advantage is
that the EPS files can be included in things like WordPerfect (or Word) as
images.
If you're just GhostViewing, then you can tell GhostView where to find the
appropriate files -- you need not bother embedding them. This procedure is
in a FAQ at www.wri.com.
