Perhaps you could state your question more clearly?
Do you want to plot your field on the sphere? Look at Help for
ParametricPlot3D with a fourth 'color' argument.
Or do you want to triangulate the surface of a sphere? And what would that
have to do with a scalar field?

Is there a package that will take as input a scalar field defined over a
unit
sphere and will return a triangulated unit sphere mesh?
