NormalDistribution[ ] defaults to NormalDistribution[0, 1]

#[NormalDistribution[ ]]& /@ {Mean, StandardDeviation}

n=100 ;
A = RandomArray[NormalDistribution[], {n, n}];

#[Flatten[A]]& /@ {Mean, StandardDeviation}
